Today I attempted to cook tofu for the first time since becoming vegan! I finally mustered up the courage to cook the tofu that had been sitting in my fridge. I did not have many other options. Don’t worry though because I am going grocery shopping in the morning. I was scared to try it, because I was not sure if it would taste good or if I could figure out how to cook it.
Hunger is a funny thing. When you are hungry you become brave. So I pulled out the tofu and pan seared it in olive oil with some soy sauce and other seasonings.
I love rice, and brown rice is healthy. I added some brown rice to make it more of a meal, and it was not bad. The only thing really missing from this meal was greens.
Now for a little marathon talk. Sunday I am running my fifth marathon in my quest to run a marathon in all 50 states. The race is in Oceanport, New Jersey. The course is said to be flat and a lot of fun.
