Marathon #5 and My First Attempt to Cook Tofu

Today I attempted to cook  tofu for the first time since becoming vegan! I finally mustered up the courage to cook the tofu that had been sitting in my fridge. I did not have many other options. Don’t worry though because I am going grocery shopping in the morning.  I was scared to try it, because I was not sure if it would taste good or if I could figure out how to cook it.

Hunger is a funny thing. When you are hungry you become brave. So I pulled out the tofu and pan seared it in olive oil with some soy sauce and other seasonings.

I love rice, and brown rice is healthy. I added some brown rice to make it more of a meal, and it was not bad. The only thing really missing from this meal was greens.

Now for a little marathon talk. Sunday I am running my fifth marathon in my quest to run a marathon in all 50 states. The race is in Oceanport, New Jersey. The course is said to be flat and a lot of fun.

    Good luck this weekend! We use tofu all the time. It’s great marinated. We usually cube it and use it in something else, like stir fry or curry. Last night’s curry had tofu cubes, potatoes, carrots, cashews, and onion over rice with a sauce. Delish!
